Balinese Style Grass-fed Beef Satay Dippers

From Brochure: Australian Beef - Catering for Variety and Value

Serves approx 90 pieces

4.5 lb Australian beef top sirloin (cut into 1 inch cubes)
½ cup madras curry powder
2 tablespoons garlic (chopped)
2 tablespoons ginger (grated)
½ cup fish sauce
6.5 oz vegetable oil
½ cup sugar
3 cups peanut butter (smooth)
3 cans coconut milk
Salt and pepper to taste

Method
Sauté garlic and ginger in a little vegetable oil, add curry powder and cook for 1 minute on low heat, add the rest of the ingredients and simmer for 10 minutes.  Let the satay sauce cool and use as a marinade for beef cubes reserving some for basting. Place 3 cubes on bamboo skewer (soaked in water).  On a hot flat top, sear beef on each side until medium.
