Australian lamb concepts for quick serve and casual dining chains

Meat & Livestock Australia (MLA) has recently developed twelve new lamb concepts as part of a product development project. Our aim was to refine the popular “street food”1 applications for lamb, making these applications suitable for mainstream casual dining outlets and quick serve restaurants (QSR).

The new lamb concepts are based on a number of popular lamb applications that already appeal to a broad cross section of consumers outside of the mainstream foodservice channels. These new ideas are applicable to various target outlets and cuisine styles, reflecting current trends in the foodservice sector. The ideas we developed had to meet specific requirements in relation to flavor, portability, affordability and health goals, we also had to take into consideration the kitchen facilities available at target chains so that the concepts would be applicable to their business capabilities.

Examples of the concepts available include:

Grilled Lamb Pita Pockets are one of the quintessential fast food applications for lamb the world over. In this instance we develop kofta seasoned lamb balls with Moroccan spices served with classic tabouli and hummus adding a refreshing cucumber yogurt sauce to balance the flavors.

The Classic Aussie Lamb Burger is an Australian icon that holds centre stage at any Aussie cook out. It consists of a grilled lamb pattie seasoned with garlic, parsley and oregano complemented by an exhaustive list of ingredients which includes a fried egg, grilled pineapple, cheddar cheese and beets to name a few. There is no better combination of flavors in any burger anywhere in the world.

The Roast Lamb Burrito consists of slow roasted lamb marinated in a Mexican spice rub. It is rolled in a grilled flour tortilla with cilantro, yellow rice & black beans and garnished with sour cream and pico de gallo to deliver an authentic flavor that is naturally healthy.
